As you might have noticed I was a little silent on here this Wednesday – hopefully, you did not miss me too much. Anyway, I am finally back with another one of my favourite recipes. Even though it might look like it, this is not just your average pizza. Here´s a little backstory…
In case you ever wondered what would happen when mum and brother leave the house, leaving one crazy daughter and her dad home alone – Your question shall be answered…
Number 1: A pizza stone is bought.
Number 2: One hell of a pizza somehow cooks in a BBQ Smoker.
This pizza was the best one I have ever made myself, so I thought it would be only fair to share the recipe with you this week!

Ingredients
For the dough (serves up to 4 people)
500g white flour (Type 405)
1 tablespoon salt
1 sachet dried yeast (about 7g)
1 tablespoon honey
325ml lukewarm water
For the toppings
400ml tomato passata
1 tablespoon Harissa paste
300g Mozzarella cheese ( I highly advise you to buy a Buffalo Mozzarella – The type of cheese makes the biggest difference!!)
125g Ricotta cheese
A couple of parmesan flakes

Instructions:
Add lukewarm water into a small jar. Pour in the sachet of dried yeast while stirring with a fork. Stir until the yeast has fully dissolved. In a large mixing bowl, add flour and salt together. Form a mould in the middle of the flour mixture. Pour dissolved yeast mixture into the mould. Start incorporating everything together with your hands (You are going to get your hands dirty sooner or later, so you might as well start now. Trust me – It´s worth it).
Flour a clean surface and start kneading your dough until it turns nice and soft. Put the kneaded dough back into the bowl. Top up with cling film. Let sit for 30-60 minutes, preferably in a warmer spot of your kitchen or house. While waiting, you can already prepare the tomato passata. In a mixing bowl, incorporate tomato passata with Harissa paste using a whisk – Done! Super easy, but adds an amazing twist to the taste.
Now that the waiting game has come to an end, flour a clean surface again to roll out the dough. This amount of dough should serve up to 4 people. Continue by putting your preferred toppings onto your pizza.
When it comes to toppings, feel free to use whatever you like best. As I am a Margherita Pizza kind of girl, I am now going to share my favourite toppings with you.
I like to top my pizza with the spiced-up version of a simple tomato sauce, add some buffalo mozzarella, as well as some parmesan flakes. If I am feeling a little more ´extravagant´ (yes, I do consider this the extravagant version of a Margherita), I love adding some dollops of Ricotta here and there, as well as a drizzle of honey after taking it out of the oven.
Let´s move on to the fun part – Instead of baking your pizza in a normal oven (which you can also do at 230°C heat for about 15 minutes), we decided to place the pizza in a BBQ Smoker Grill. All you need for this is a pizza stone, which you should place in the BBQ about 20 minutes before baking your pizza, so that it´s already nice and hot. Place your pizza onto the stone, close BBQ and let cook for about 8-15 minutes – Depending on how crispy you like it.
