Belgian Waffle Heaven

Welcome to Belgian Waffle Heaven everyone – Hope you´re just as excited for this as I am!

Last year, I travelled through Belgium with a friend of mine and as part of our cultural experience, we obviously had to try the famous Belgian Waffle! Now, what I did not know is that there are actually two kinds of ´Belgian´ Waffles – The Liège Waffle and the Brussels Waffle. After trying both of them – obviously only for cultural reasons – It is safe to say that the Liège Waffle is my personal winner! It is nice and crispy on the outside, yet so soft on the inside including all the little bits of the coarse sugar – Sounds convincing, doesn’t it?

After traveling back home, trying out all kinds of different recipes and changing some bits here and there, I came up with the perfect recipe. So I thought it would be only fair, to share my favorite Belgian or Liège Waffle recipe with you today!

Let´s jump right into it!

Ingredients

  • 500 g flour
  • 75 g sugar
  • 25 g fresh yeast
  • 2 free-range eggs
  • 230 ml whole milk
  • 275 g soft, unsalted butter
  • 300 g of coarse sugar

Instructions

Heat up the whole milk to a lukewarm temperature. Take milk off the heat. Add fresh yeast and sugar to the milk. Stir until both yeast and sugar have dissolved. Add butter and eggs. Give it a good mix. Sieve flour to the rest of your mixture. Combine everything until a sort of ´sticky´ dough texture is reached.
Cover the mixture and let it sit for at least one hour, preferably two hours – To let the yeast do its magic.

Now, add the coarse sugar bits to your mixture. Give it a gentle stir, as you don´t want to lose the fluffiness of the dough. Lastly, let the cooking fun begin! Add small scoops of the mixture to your waffle iron – Ét voila!

The only thing left to do is choose some toppings for your delicious, homemade Belgian Waffles. I personally love topping mine with some strawberries, cherries or the authentic (and not so healthy) way – with some melted dark chocolate. Hope you enjoy!
