Hey everyone – hope you´re all happy & healthy!
I guess there´s no need to discuss the difficulties we´re currently facing all over the world. All I want to say is that I hope that you are happy, healthy and most importantly – staying at home! Now, I know that staying indoors all day long can be pretty exhausting, but there are loads of benefits to it as well. When was the last time you were able to have breakfast in bed for example?
So for all my fellow #stayathome heroes, I am going to share my go-to breakfast in bed situation: It´s a Peanut Butter Porridge with raspberries and white chocolate crunch! Let´s get cooking, shall we?
Ingredients (unless you´re super hungry, this should serve 2)
- 2 large cups of rolled oats
- 3 large cups of oat milk
- 1 tablespoon of honey
- 2 tablespoons of creamy peanut butter
- a handful of frozen raspberries
- 50g white chocolate
Instructions
Pour oat milk into a saucepan and bring to a boil on medium heat. Add both honey and peanut butter to the oat milk. Give it a good stir until everything is fully dissolved. Now it´s time to add your oats to the saucepan! Cook the oats on medium heat for about 4-5 minutes, while giving it a good stir every once in a while. You´ll know that the oats are ready when the mixture starts to thicken up properly.
Time to add your raspberries – Once again, giving it a good stir. Take everything off the heat – Time to serve!
Making white chocolate crunch was sort of an accident at first, but turned out to be super delicious! Simply break up your white chocolate into pieces, put them in a bowl and microwave on high heat. At first, it seems as if the chocolate is melting – leave it a little longer and you´ll see how the chocolate starts to firm up. Now it´s time to take it out of the microwave and crumble the chocolate on top of your delicious peanut butter porridge!
Ét voila! A simple, yet delicious twist to your classic porridge – Perfect for breakfast in bed during quarantime!
