
Inviting friends over for dinner is always a fun idea, but with a busy work schedule it is not always easy to prepare — We know it, we´ve all been there!
Some of you might be already on the verge of ordering a take-away. However, a nice meal can only really be enjoyed, when home-cooked and shared with your loved ones!
With the following recipe, I want to take you with me on a fun night-in with friends that requires less effort and gives you some time to get ready in between.
Plus, I guarantee you it will put a big smile on any of your guests faces!

Main course — Fiery potatoes
Fiery potatoes is an impeccable meal for any group of friends that like it spicy and flavorsome!
With its combination of the Harissa spice and tomato paste, it creates the perfect heat, which is balanced out by the crispy Feta cheese on top. If this hasn’t already convinced you yet — let me add a bonus on top:
It can all be prepared and served on one large baking tray, and I mean — who doesn’t love a bit less of washing up to do.
So grab yourself a nice glass of wine and let´s get cooking!
Ingredients (for 4 portions)
- 500 g potatoes
- 200 g tomatoes
- 400 g canned chickpeas
- 300 g Feta cheese
- 2 teaspoons Harissa paste
- 5 tablespoons tomato paste
- 3 tablespoons olive oil
- 4–5 tablespoons water
- Pinch of salt
- Pinch of pepper
Garnishment
- 50 g roughly sliced parsley
- 50 g roughly sliced coriander
Instructions
Preheat the oven to to 220 degrees celsius. Peel the potatoes. Quarter them into potato wedge pieces. In a large bowl, mix potato slices with olive oil, a pinch of salt and a pinch of pepper. Spread out potato slices on a large baking tray. Let it cook in the oven for about 20–30 minutes until golden and crispy.
Meanwhile: In a large mixing bowl, add Harissa and tomato paste together. Stir until a paste-like texture is created. Add water to the paste. Stir again until everything is well incorporated.
Rinse chickpeas under water until foam disappears — Yes, the foam is normal. Cut tomatoes in half. Add both to the paste mixture. Stir until chickpeas and tomatoes are well incorporated with the paste.
After 20–30 minutes, take the baking tray with potatoes out of the oven. Turn oven settings to 220 degrees celsius grill — if possible.
Spread the “tomato-chickpea-harissa“ mixture on top of the potatoes. Crumble the Feta cheese on top.
Put baking tray back into the oven. Let it cook for about 8–10 minutes until the Feta cheese on top turns golden.
Serve with a sprinkle of roughly sliced parsley and coriander on top, because who doesn’t love a bit of greenery on top of their food!
Time for dessert! — Homemade sorbet ice cream
After this delicious, but rather “carb-based“ meal your guests are probably going to crave something sweet, yet refreshing.
My homemade sorbet ice cream is quick and simple. Plus an exciting bonus — it can be pre-made and stored in the freezer, ready-to-go just in case.
Ingredients (for 4 portions)
- 500g frozen fruit of choice
- 1 lime
- 1 tablespoon honey
- 2 tablespoons powder sugar
- 2 tablespoons lukewarm water
- 30g mint
Instructions
In a large mixing bowl, add frozen berries, the juice of one lime, honey, water, powder sugar and mint. Use a blender. Blend until smooth. — Yes, it´s that simple!
Serve with a few leaves of mint on top and enjoy!
